Teriyaki Sesame Salmon Onigirazu (Sushi Sandwich)

  • 4 Teriyaki Sesame Salmon Fillets
  • 2 cups sushi rice
  • ½ cup seasoned rice vinegar
  • 1 cup red cabbage, shredded
  • 1 cup carrots, shredded
  • 1 avocado, sliced
  • 4 sushi nori sheets
Tips from the chef: The same ingredients can be used to make a traditional sushi roll. Feeling spicy? Combine equal parts mayonnaise and sriracha for an awesome dipping or drizzling sauce. After folding in the rice vinegar place the rice by a fan to cool quickly and give the rice a nice shiny appearance.
  1. Pan sear salmon on the stove top as per package directions.
  2. Cook 2 cups of sushi rice cooked to package instructions. While sushi rice is cooling fold in ¼ cup of seasoned rice vinegar.
  3. Use remaining rice vinegar to dress cabbage.
  4. To assemble lay the nori (rough side up) on a piece of clingfilm. Wet fingers (to prevent sticking) and place a small pile of rice in the center of the nori and flatten out to roughly the same size of the salmon. Top rice with a portion of red cabbage followed by the salmon, avocado and carrots. Repeat this process with remaining ingredients.
  5. Wet fingers and bring the corners of the nori sheet into the center. Wrap tight and wait a few minutes before slicing. Use a sharp knife and slice though the clingfilm and then remove the film before serving.
