Applewood Smoked Salmon & Sweet Potato Poutine
Perfected in Quebec and given a twist with our Applewood Smoked Salmon. Try this easy-to-make Poutine for some elevated comfort food.

- 1 package sea cuisine Smoked Applewood Salmon
- 1 package frozen sweet potato fries
- 8 ounce Cheddar cheese curds
- 2 tbsp. parsley , chopped
For Maple Gravy
- 2 tbsp. Unsalted Butter
- 2 tbsp. All Purpose Flour
- 1/4 cup Onions, minced
- 1 tablespoon garlic, minced
- 2 cups Chicken Stock
- 2 tbsp. Maple Syrup
For the Cranberry Mustard
- 1 cup Fresh Cranberries
- 1/2 cup Water
- 1/2 cup Sugar
- 2 tbsp. Dijon Mustard
- 2 tbsp. Grain Mustard
- Prepare Salmon and Sweet Potato French Fries according to package instructions.
- For the gravy: Add butter to a small stockpot. Melt and cook onions over medium heat for 2 minutes. Add garlic and cook for 30 seconds. Whish in flour and cook for 1 additional minute. Add chicken stock and simmer until thickened. Whisk in maple syrup off heat and season to taste with salt and pepper.
- In a small pan, bring water, cranberries, sugar, and honey to a simmer. Cook until cranberries pop. Remove from the heat, cool slightly, and then puree the cranberry mixture in a blender. Stir in mustards after pureeing.
- Add cheese curds to sweet potato fries during the final minutes of cooking.
- Drizzle hot fries and melty cheese curds with reserved maple gravy and top with sliced applewood salmon. Garnish with cranberry mustard and chopped parsley.
