Tilapia & Baked Caprese Polenta Casserole
A delicious and easy Italian-inspired dish perfectly paired with Garlic & Herb Tilapia.

- 2 packages Pan Sear Garlic & Herb Tilapia
- 4 cups Quick Cooking Polenta
- 2 tbsp. Unsalted Butter
- 2 cups Prepared Marinara Sauce
- 2 cups Shredded Mozzarella Cheese
- 1 cup Grated Parmesan Cheese
- 1/2 cup Fresh Basil Leaves
Tips from the chef: Serve with a fresh mixed green salad for an excellent complete meal.
- Prepare the quick-cooking polenta according to the package instructions.
- Preheat oven to 400. Melt the butter in an 8-10" oven-proof pan. Remove from the heat and pour half of the polenta into the bottom of the pan, ensuring it reaches all edges. Sprinkle with approximately one-quarter of the marinara sauce and half of the shredded mozzarella cheese. Spread the remaining polenta across the top of the casserole and repeat the process with the Marinara(reserving some) and shredded cheeses. Bake in the preheated oven for 15-20 minutes until the edges pull from the side and the cheeses are fully melted.
- While the polenta casserole bakes, prepare the Tilapia in a saute pan according to the package instructions.
- To finish, serve individual portions of polenta in the center of a plate along with the Tilapia. Spoon on reserved marinara sauce, garnish with fresh basil, and reserved parmesan cheese.
