Crab Cakes & Apple-Ginger Salsa

- 1 package Sea cuisine Authentic Maryland Crab Cakes
- 1 cup pea greens, or tender lettuces
For the Salsa
- 1 each Granny Smith apple, diced small
- 1 each honey crisp apple, diced small
- 1/4 cup red onion, minced
- 1 tbsp. Serrano Pepper, minced
- 2 tbsp. Lime Juice
- 1 tbsp. Olive Oil
- 1 tsp. Sugar
- 2 tablespoon cilantro, chopped fine
For the Winter Herb Mayo
- 1/2 cup Mayonnaise
- 1 tbsp. Fresh Thyme, chopped
- 1 tsp. Fresh Rosemary, chopped
- 1 tablespoon fresh garlic, chopped
- Toss the diced apples with lime juice. Add the diced apples, red onion, serrano pepper, garlic, ginger, sugar, olive oil, and cilantro to a small bowl. Stir well and reserve.
- In a small bowl, stir the minced garlic, thyme, and rosemary into the mayonnaise and reserve under refrigeration.
- Prepare the crab cakes according to the package instructions.
- To complete spread about 2 tbsp. of winter herb mayo artfully across the bottom of a plate. Add two fully cooked crab cakes and top with a generous serving of ginger-apple salsa. Serve with mixed greens on the side (optional).
