Cod & Cauliflower-Broccoli Gratin

- 2 packages Sea Cuisine Potato Crusted Wild Cod
- 1 head cauliflower, cut into florets
- 1 head broccoli, cut into florets
- 2 tbsp. Unsalted Butter
- 1/2 cup White Onions, diced small
- 2 tbsp. Olive Oil
- 1 tbsp Garlic, minced
- 6 tbsp. Flour
- 4 cups Light Cream
- 2 cups Gruyere Cheese, shredded
- 1 cup Breadcrumbs
- Preheat oven to 425 degrees. Grease a 9"x13" baking dish with pan release
- In a medium-sized pot add the butter and the chopped onions. Cook for 3 minutes over a medium- high setting until the onions turn translucent. Add the minced garlic and cook for an additional 30 seconds. Add the olive oil to the pot along with the flour, mix well and cook for an additional 2 minutes, stirring occasionally. Add the light cream and the mixture to a gentle simmer before adding the broccoli and cauliflower florets. Stir well.
- Season to taste with salt and pepper before pouring this sauce and vegetable mixture into the prepared baking dish. Sprinkle the dish with the reserved cheese and breadcrumbs.
- Place the potato cod onto a separate baking pan. Place both the gratin dish as well as the cod pan into the preheated oven and cook for 20-25 minutes until the potato cod is fully cooked and the gratin is nicely browned and caramelized on top.
- Serve the potato-crusted cod atop a generous serving of Cauliflower & Broccoli Gratin. Garnish with fresh chives if desired.
