Teriyaki Sesame Salmon Banh Mi

- 1 each Small French Baguette, cut into two equal sized sandwich portions and then split in half creating a top and bottom
- 1 package Sea Cuisine Sesame Teriyaki Salmon
- 1/2 cup Cilantro, pickled and cleaned
- 1/2 cup Basil, picked and cleaned
- 1 cup Cucumbers, sliced thin
- 1 cup Bell Peppers, cut into strips
- 1/2 cup Carrots, cut into thin rounds
- 1/2 cup Purple Cabbage
- 1/2 cup Rice Wine Vinegar
- 1 tablespoon Sugar
- 2 teaspoons Kosher Salt
- 1/4 cup Mayonnaise
- 2 tablespoons Sriracha, or similar hot chili paste
- 2 teaspoons Lime Juice
- Preheat skillet on medium/high heat. Place frozen fillets in a single layer into skillet and cook for10-11 minutes, turning over halfway through cooking.
- Prepare the quick pickled veggies by tossing together in a small bowl the cucumbers, bell peppers, carrots, rice wine vinegar, sugar and kosher salt. Mix well and allow to marinate for 10+minutes.
- For the spicy mayo mix together in a small bowl the mayonnaise, sriracha and lime juice.
- Assemble the banh mi by spreading 2 tablespoons of spicy mayo across the bottom half of each baguette portion. Next add half of the basil and half of the cilantro to each sandwich and then followed by half of the quick pickled veggies and red cabbage. Finish with a portion of Sesame Teriyaki Salmon and top with the other half of baguette and enjoy!
