Oven Baked Potato & Herb Cod with Mac & Cheese

- 2 Sea Cuisine Potato Crusted Cod Fillets
- 1 tbsp onions, minced
- 1 tbsp garlic, minced
- 4 cups milk
- 6 tbsp flour
- 6 tbsp soft butter
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 2 cups elbow macaroni
- 2 tbsp parsley, chopped
- 2 tbsp chopped chives (optional)
- Bake Sea Cuisine Potato & Herb Cod as per package directions.
- Add butter, onions and garlic to a medium sized pot and sweat for a few minutes. Add flour to form a roux and continue to cook on low heat for a few minutes being careful not to brown the roux.
- Whisk in milk and bring to a simmer. Sauce will begin to thicken at this point.
- Slowly whisk in grated cheese saving about a ¼ cup of cheese for later. Stir frequently, keep heat low! Sauce should be thick enough to coat the back of a wooden spoon. Finish with parsley and season to taste.
- Bring a pot of salted water to a boil and cook the macaroni. Drain and combine with the cheese sauce. Pour mac & cheese into a suitable casserole dish and top with the reserved grated cheese. Go ahead and add even more cheese to the top if you wish!!
- Place the casserole in the same oven as the Cod and bake until cheese has formed a nice crust and the casserole is bubbling around the edges (approx 20min)
- Slice cooked Sea Cuisine Potato Crusted Cod into strips or leave whole and serve on top of mac & cheese. Garnish with chopped chives.
