Strawberry & Avocado Salad with Honey Chipotle Salmon

Avocados and strawberries are a match made in heaven! It’s the smooth rich texture of avocados that welcomes the juicy sweet and tart flavors of fresh strawberries. They both pair perfectly with the smokey, sweet flavors of the Honey Chipotle Salmon!

  • 1 package of Sea Cuisine Honey Chipotle Salmon
  • ¾ cups strawberries, quartered
  • 1 ripe avocado
  • ¼ cup feta cheese
  • 2 tbsp pistachios, crushed
  • 3 cups baby spinach

For the simple strawberry dressing:

  • 3 tbsp olive oil
  • 1.5 tbsp vinegar (try different types, like white balsamic/cider)
  • 1 tbsp strawberry jam

For the level up dressing:

  • 1 cup strawberries
  • 1.5 cups water
  • ¼ cup sugar
  • 3 tbsp balsamic vinegar
  • ½ cup olive oil
  1. 1. Cook Honey Chipotle Salmon as per package directions 2. Peel and slice avocados 3. For the simple strawberry dressing place all the ingredients into a bowl and whisk until jam has dissolved.

  3. 4. Level up strawberry dressing – Place strawberries, water, and sugar in a pot, bring to a boil then simmer until reduced to a thick syrup 5. Remove from heat and cool slightly before adding to a high-speed blender with balsamic vinegar. Slowly incorporate the olive oil while blending 6. Combine remaining ingredients into a bowl and toss with strawberry dressing and top with Honey Chipotle Salmon.
