- 1 package Sea Cuisine Garlic & Herb Tilapia
For the Apple Almond Wild Rice
- 1 ea Wild Rice Pre Bought Wild Rice Mixture
- 2 tbsp Butter
- 1/4 cup Sliced Almonds
- 1/2 ea Granny Smith Apple, diced peeled before dicing
- 2 tbsp Parsley, chopped
For the Honey Mint Roasted Carrots
- 2 tbsp Butter
- 2 tbsp Honey
- 1 ea Lemon, juice and zest
- 1 tbsp Mint, small chopped
- 1/2 cup Sweet Onion, sliced thin
- 1 cup Carrots, sliced
- Salt And Pepper to taste
- Prepare the Tilapia per the package instructions.
- For the Apple Almond Wild Rice: Prepare the pre bought wild rice mixture according to it's package instructions. Meanwhile, melt 1 tbsp of butter in a large non-stick saute pan. Add the apples and cook for 2-3 minutes until softened and lightly browned. Add the almonds and cook for an addition 1-2 minutes until slightly toasted. Reserve off heat. Once the rice mixture has finished cooking, gently fold in the apple and almond mixture along with the chopped parsley. If desired, season with salt and pepper.
- For the Honey Mint Roasted Carrots: Mix melted butter with honey, lemon, mint and salt and pepper. Toss with the carrots and onions and roast at 400℉ for 20 minutes or until browned and tender.
- To Assemble the Dish: Divide the rice pilaf along with the roasted carrots equally between two plates. Top each with a fully cooked portion of Tilapia and garnish with additional mint sprigs if desired.
