Kicked Up Potato & Herb Codwich

  • 1 package Sea Cuisine Potato Crusted Cod Fillets 10oz
  • 2 burger buns
  • ¼ cup mayonnaise
  • 1 tbsp. sriracha hot sauce*Feel free to use any type of hot sauce you have on hand
  • ½ cup cucumbers, thinly sliced
  • ½ baby arugula
  • salt and pepper to taste

Coleslaw:

  • Quick option: use pre-made coleslaw from the grocery store as a substitute.
  • 1 cup shredded red cabbage
  • 1 lime, cut in half
  • 2 tbsp. extra virgin olive oil

  1. Cook the cod according to the package instructions.
  2. While the fish cooks, mix the sriracha hot sauce and mayonnaise in a small bowl. Season to taste with salt and pepper.
  3. In a separate bowl, mix the cabbage with the olive oil and a big squeeze of lime juice, and season to taste with salt and pepper.
  4. Spread spicy mayo on the bottom half of each bun, top with cooked cod, sliced cucumbers, slaw, and arugula. Dig in!
