- 2 portion Sea Cuisine Citrus Herb Salmon
- 1 cup Sweet Potato
- 1/2 cup Walnuts, toasted
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp White Sugar
- 1/2 tsp Ground Cinnamon
- 1/4 tsp Ground Nutmeg
- 1/4 cup Basil fresh, chiffonade for garnish
For the Farro, Kale and Cranberries
- 1 cup Farro, toasted
- 1/2 cup Dried Cranberries
- 2 cup Kale
For the Lemon Basil Vinaigrette
- 2 tbsp Lemon, juice
- 2 tbsp Cider Vinegar, Apple
- 1/4 tbsp Extra Virgin Olive Oil, EVOO
- 1/4 cup Basil, chopped
- Salt And Pepper, as needed
Tips from the chef: Experiment with your favorite ancient power grains, vegetables, herbs, fruits and nuts.
- For the Sea Cuisine Citrus Herb Salmon: In a small bowl toss the walnuts and cubed sweet potato together along with the olive oil, sugar, cinnamon and nutmeg. Add the walnuts and sweet potatoes to a sheet pan along with the Citrus Herb Salmon and cook according to the package instructions of the Salmon. Halfway through the cooking gently stir the sweet potatoes and walnuts.
- For the Lemon Basil Vinaigrette: In a small bowl whisk together the lemon juice and cider vinegar. While whisking slowly drizzle in the olive oil. Finish with the chopped basil and season with salt and pepper to taste.
- For the Farro: Prepare Farro according to it's package instructions. Strain, pressing on farro to extract excess moisture if necessary. In a large bowl toss together the farro, cranberries, kale and fully cooked sweet potatoes and walnuts. Dress with the vinaigrette and stir well.
- To Plate: Divide the farro mixture equally between two bowls. Top each with a fully cooked portion of Citrus Herb Salmon and garnish with the chiffonade basil.
