Garlic & Herb Tilapia + Potato, Bacon And Brussels Sprouts Salad

- 1 package Sea Cuisine Garlic & Herb Tilapia
- 8 oz Fingerling Potato halved
- 1 tbsp Kosher Salt
- 4 slice Bacon diced
- 8 oz Brussels Sprouts, trimmed
- 1 cup Frisée or other bitter greens
- 2 cup Green Leaf Lettuce, trimmed leaves torn into bite sized pieces
- 1/2 cup Red Onion, sliced
- 2 tbsp White Wine Vinegar
- Slice the fingerling potatoes into 1/4" rounds, add to a small pot and cover with water along with 1 tbsp. of kosher salt. Bring to a simmer and cook for approximately 8-10 minutes until tender. Strain and reserve.
- Trim and halve the Brussels sprouts. Set aside
- Preheat a non-stick skillet over a medium-high heat. Add 1 tbsp of vegetable oil to the pan along with the Sea Cuisine Garlic & Herb Tilapia portions. Cook for approximately 5 minutes on the first set.
- Flip the Tilapia portions over and add the diced bacon to the pan. Continue cooking the Tilapia for an additional 5-6 minutes, or until an internal temperature of 145℉ is achieved.
- Remove the Tilapia from the pan. Add the trimmed Brussels sprouts and cook for 3-5 minutes until lightly browned and tender.
- Add the reserved fingerling potatoes to the pan and cook for 1 minute until browned and warmed through.
- Toss the frisée, green leaf lettuce and sliced red onions in a bowl. Divide this mixture between two serving bowls. Top with the Garlic Herb Tilapia and add half of the potato-Brussels mixture to each bowl respectively.
- Using a small spoon drizzle approximately 1 tbsp. of the remaining bacon fat across the greens along with 1 tbsp. of the vinegar for each bowl.
