Potato & Herb Cod With Crispy Mushrooms, Shallots + Sautéed Veggies

- 1 package Sea Cuisine Potato & Herb Cod
- 1 cup Shallot, sliced
- 2 cup Cremini Mushrooms sliced
- 2 tbsp Olive Oil divided
- 6 oz Green Beans trimmed
- 1 cup Carrots, shredded
- 1 cup Cherry Tomato
- 2 tbsp Lemon, juice
- 1 tbsp Unsalted Butter
- Salt And Pepper, to taste
- Add the mushrooms and shallots to a bowl and toss well with 1 tbsp. of the olive oil. Add to a sheet pan along with the two portions of Cod.
- Prepare the Potato Crusted Cod, along with the shallots and mushrooms, in a 425 ̊F preheated oven according to the package instructions.
- While the Cod cooks preheat a large sauté pan over medium-high heat. Add the remaining tbsp. of olive oil and sauté the green beans for 2 minutes until slightly browned. Add the cherry tomatoes and shredded carrots and cook for 1 additional minute while seasoning to taste with salt and pepper. Finish the veggies with the lemon juice and unsalted butter.
- Divide and transfer the sautéed vegetables to two plates. Top with the roasted mushrooms and shallots along with a fully cooked portion of Potato Crusted Cod.
