Potato & Herb Cod With Crispy Mushrooms, Shallots + Sautéed Veggies

  • 1 package Sea Cuisine Potato & Herb Cod
  • 1 cup Shallot, sliced
  • 2 cup Cremini Mushrooms sliced
  • 2 tbsp Olive Oil divided
  • 6 oz Green Beans trimmed
  • 1 cup Carrots, shredded
  • 1 cup Cherry Tomato
  • 2 tbsp Lemon, juice
  • 1 tbsp Unsalted Butter
  • Salt And Pepper, to taste
  1. Add the mushrooms and shallots to a bowl and toss well with 1 tbsp. of the olive oil. Add to a sheet pan along with the two portions of Cod.
  2. Prepare the Potato Crusted Cod, along with the shallots and mushrooms, in a 425 ̊F preheated oven according to the package instructions.
  3. While the Cod cooks preheat a large sauté pan over medium-high heat. Add the remaining tbsp. of olive oil and sauté the green beans for 2 minutes until slightly browned. Add the cherry tomatoes and shredded carrots and cook for 1 additional minute while seasoning to taste with salt and pepper. Finish the veggies with the lemon juice and unsalted butter.
  4. Divide and transfer the sautéed vegetables to two plates. Top with the roasted mushrooms and shallots along with a fully cooked portion of Potato Crusted Cod.
