- 2 oz. mixed Mediterranean olives, pitted

- A few sprigs of fresh parsley, and dill
- 2 oz. Greek style feta cheese block, cut into ½" chunks
- 2 roma tomatoes, quartered
- 1 lemon, cut in half
- 1 tbsp. extra virgin olive oil
- Cracked black pepper, to taste

Traditional charcuterie boards you’d find at a restaurant usually include dried meats, crackers, or whole-fat cheeses, which can add extra calories and sodium to your dish. Switch it up with seafood! Snag some store bought hummus, tzatziki, or bean dip to add to your mezze platter for a deliciously creamy fix. Left over grilled or roasted veggies make a great addition, and what better way to use them up!? Pair with what you have on hand and feel like a five star chef while doing it. Gather what you have, artfully arrange, (snap a food pic!), and devour!
- Cook the Wild Alaska Salmon according to the package instructions.
- Now, let’s assemble your mezze platter.
- Using a large plate or family-style platter, arrange the cooked Wild Alaska Salmon along with the various mezze ingredients. Sprinkle fresh herbs over the plate. To finish, drizzle the feta and tomatoes with olive oil, a squeeze of lemon, and cracked pepper to taste. Dig in!
- For the best food quality and safety, cook fish to a minimum internal temperature of 155°F.
