Tortilla Tilapia Tacos Verde

  • 1 package Sea Cuisine
  • 1 large Delicatta Squash
  • 1 tbsp. Vegetable Oil
  • 12 Corn Tortillas
  • 3 Limes
  • 1 cup Cilantro Leaves, packed
  • 1 # Tomatillos
  • 1/4 cup canned pickled jalapenos
  • 2 Garlic Cloves
  • 2 tbsp. Olive Oil
  • 1 cup Purple Cabbage, sliced thin
  • 1/2 cup Fresno Peppers, seeded and sliced thin
  • 1/2 cup Queso Fresco
  1. Cut 1/2" off of each end of the Delicatta squash. Slice in half lengthwise and then scoop out the seeds. Cut the squash into half circles 1/2" thick, toss lightly in vegetable oil and add to the pan along with the Tilapia. Prepare the Tortilla Tilapia according to the package instructions.
  2. Char tomatillos over an open flame(optional.) Add pickled jalapenos, tomatillos, garlic and cilantro to a blender. Process on high until smooth and then begin drizzling in the reserved olive oil. Season liberally with salt and pepper.
  3. Char corn tortillas briefly over an open gas flame. Assemble tacos beginning with the roasted Delicatta squash. Slice tilapia to fit the tacos and drizzle generously with tomatillo sauce. Garnish with queso fresco, purple cabbage and additional cilantro if desired.
