  • 1 package Sea Cuisine Garlic Herb Tilapia
  • 12 ea Brussels Sprouts, trimmed
  • 1 ea Sweet Potato, peeled
  • 1 ea Red Onion, dice
  • 2 sprig Rosemary, chopped

For the Vinaigrette

  • 6 tbsp Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Dark Brown Sugar
  • 1 tsp Kosher Salt
  • 1 tsp Ground Black Pepper

To Finish

  • 1/4 cup Feta Cheese, crumbled
Tips from the chef: You can switch out any or all root vegetables with your favorite vegetables (carrots, mini potatoes, green beans, etc)
  1. Preheat your oven to 375 ℉/190℃
  2. For the Vinaigrette: Combine the olive oil, balsamic vinegar, brown sugar, and salt & pepper in a bowl. Whisk well
  3. For the Tilapia & Veggies: Toss the vegetables with half of the vinaigrette and chopped rosemary in a medium sized bowl. Place the two fillets of Tilapia onto a parchment lined baking sheet and spread the vegetables around the fillets. Bake in the preheated oven for approximately twenty minutes, or until the Tilapia registers 145°F before enjoying.
  4. To Finish: Divide the roasted vegetables equally between two dinner plates. Top each plate with a fully cooked portion of Tilapia. Drizzle the dish with the remaining vinaigrette and garnish liberally with the feta crumbles.
