Shrimp Scampi & Caprese Zoodles

- 1 package Sea Cuisine Shrimp Scampi
- 2 tbsp Olive Oil
- 1 cup Cherry Tomato
- 2 ea Zucchini, spiralized
- 1 cup Ciliegine Mozzarella, drained
- 1 Lemon, sliced into half moons
- 1/2 cup Basil, leaves
- Prepare the Shrimp Scampi according to the package instructions.
- Preheat a large non-stick saute pan over a high setting. Add 1 tbsp of the olive oil to the pan. Once the oil starts to smoke add the cherry tomatoes and cook for 15 seconds, or just until charred. Remove from the pan.
- Add the additional tbsp of olive oil to the preheated pan and add all of the spiralized zucchini, or zoodles. Cook for 30 seconds, tossing consistently, until the zoodles are softened.
- Transfer the zoodles to a platter. Top with the ciliegine mozzarella and blistered cherry tomatoes. Transfer the fully cooked Shrimp Scampi to the platter. Garnish with half moons of lemon and fresh basil leaves.
