Scampi Shrimp Nachos

  • 1 package Sea Cuisine Shrimp Scampi
  • 6 oz White Corn Tortilla Chips
  • 2 cup Shredded Mozzarella
  • 1 ea Canned White Beans
  • 3/4 cup Sour Cream
  • 3/4 cup Tomatillo Salsa
  • 1/4 cup Cilantro, chopped (no stem)
  • 1 ea Lime

  1. Prepare the Classic Shrimp Scampi in a sauté pan according to the package instructions. Remove from heat once fully cooked and allow to cool just slightly.
  2. Preheat your oven to 400℉ and line a baking sheet with parchment paper. Lay out half of the tortilla chips across the bottom of the baking pan. Spoon about half of the Shrimp and 1/4 cup of Scampi sauce onto the bed of nachos as well. Repeat with half of the mozzarella, beans and pickled jalapeno respectively.
  3. Next, repeat the process beginning with the remaining tortilla chips and layering on the rest of the Shrimp, mozzarella, white beans and pickled jalapenos. Spoon approximately 1/4-1/2 cup of Scampi sauce onto the nachos as well, being sure not to make the dish too wet.
  4. Bake the sheet pan nachos in the preheated oven for approximately 8-10 minutes until the cheese is fully melted and beginning to brown around the edges
  5. Garnish the sheet pan of nachos beginning with the diced avocado and followed by large dollops of sour cream and tomatillo salsa across the dish. Finish with the chopped cilantro. Serve with lime wedges on the side for squeezing fresh on
