Kung Pao Shrimp Bowl

Preparation
  1. Prepare the Kung Pao Shrimp according to the package instructions. Add all of the sliced bell peppers to the saute pan during the final 5 minutes of cooking.
  2. Add the water to a medium sized pot and bring to a boil over high heat. Add the salt and rice to the water. Bring back to a boil before turning down to a gentle simmer and covering the pot. Cook for about 20 minutes until all of the water is absorbed. Remove from heat and let stand for 5 minutes
  3. Add approximately 1 cup of cooked rice to each of two bowls. Divide the Kung Pao Shrimp and bell peppers equally between each bowl. Garnish with peanuts and chopped scallions.
