Cajun Shrimp Grain Bowl

- 1 package Sea Cuisine Cajun Shrimp
- 1/2 cup Quinoa
- 3/4 cup Water
- 1 tsp Kosher Salt
- 3/4 cup Mango diced
- 3/4 cup Purple Cabbage, sliced thin
- 1 ea Avocado, sliced
- 2 ea Lime, wedge
- 2 tbsp Chives, chopped
- Prepare the Cajun Shrimp according to the package instructions.
- Add the quinoa, salt and water to a small pot. Bring to a gentle simmer and cook approximately 8-10 minutes, until all of the water has been absorbed and the quinoa is tender and fluffy.
- Divide the quinoa equally between two bowls. Top each with half of the fully cooked Cajun Shrimp. Artfully arrange the mango, cabbage and avocado around the edge of the bowl. Garnish with fresh chopped chives and a lime wedge.
