Cajun Shrimp Burrito

  • 1 package Sea Cuisine Cajun Shrimp
  • 1 package Spanish Rice
  • 2 ea Flour Tortilla
  • 1/4 cup Grated Parmesan
  • 1/2 cup Black Beans Canned
  • 1/2 cup Frozen Corn
  • 1/2 cup Bell Pepper, chopped
  • 1/2 cup Prepared Salsa
  • 1 ea Avocado
Tips from the chef: Serve extra Cajun sauce in a ramekin on the side for dipping, dunking and smothering your burrito.
  1. Prepare the Cajun Shrimp according to the package instructions.
  2. Briefly warm the flour tortillas in a microwave for approximately 15 seconds to make them more pliable.
  3. Lay out the tortillas on a flat work surface. Add approximately 1/2 cup of Spanish Rice to the center of each burrito. Add half of the corn, peppers and beans to each burrito respectively.
  4. Divide the shrimp in half, reserving most of the sauce, and add each half to a burrito, ensuring a few inches of tortilla are uncovered at the bottom, top and sides of the burrito. Divide the parmesan in half and sprinkle generously over each burrito.
  5. Fold in the left and right side of the tortilla towards the middle, taking care not to overcrowd or shift the fillings. Fold the bottom up and over the filling, pressing down gently, but firmly. Using your thumbs, gently roll the burrito over itself, taking care to keep the sides tucked into the burrito as you roll.
  6. Serve simply as is with additional Cajun sauce on the side or accompanied with prepared salsa and fresh avocado if desired.
