Crab Cake Pasta

  • 1 package Sea Cuisine Authentic Maryland Style Recipe Crab Cakes
  • 1/3 cup Saltine Crackers crushed
  • 1/4 cup Butter divided
  • 1/2 cup Celery, diced
  • 1/2 cup Leeks, chopped
  • 1/2 cup Red Bell Pepper, diced
  • 1/2 cup Mayo
  • 1 tbsp Old Bay
  • 2 tbsp Dijon Mustard
  • 2 tbsp Lemon, juice
  • 1/2 lb Crest De Gallo Pasta or your favorite variety
  • 2 tbsp Parsley, chopped
  • 2 tbsp Scallions, chopped
  • 4 ea Lemon, wedge
  1. Prepare the Crab Cakes according to the package instructions. Bring a large pot of water to a boil and prepare your pasta according to it's package instructions.
  2. In a small bowl mix together the mayo, old bay, mustard and lemon juice. Reserve on the side.
  3. In a large non-stick sauté pan melt half the butter over a medium-high setting. Add the crushed saltine crackers and toast for 3-4 minutes until golden brown. Remove the cracker crumbs from the pan and reserve set aside.
  4. Add the remaining butter to the sauté pan and cook the celery, leeks and bell pepper for 3-5 minutes or just until tender. Remove from the heat and stir in the fully cooked and strained pasta. Gently stir in the reserved mayo mixture and half the parsley and scallions.
  5. Divide the pasta equally between two bowls. Garnish with the reserved cracker crumbs, lemon wedges and the remaining parsley and scallions. Top with a fully cooked Crab Cake and enjoy.
