Bacon Wrapped Sweet Bourbon Salmon Bites With Peach Julep Mocktail

For the Salmon Bites

  • 1 package Sea Cuisine Sweet Bourbon Salmon
  • 5 slices Bacon
  • 10 ea Skewers Or Toothpicks

For the Peach Julep Mocktail

  • 1 cup Light Brown Sugar divided 1/2 cup & 1/2 cup
  • 2 cup Water
  • 1 ea Peaches, pit removed sliced
  • 1 tbsp Unsalted Butter
  • 1/2 tsp Kosher Salt
  • 4 oz Zero Proof Whiskey Alternative
  • 2 ea Mint large sprigs for garnish
Tips from the chef: **Pull the Sweet Bourbon Salmon from the freezer and allow to sit at room temperature for ten minutes before proceeding with the Salmon Bite portion of the recipe.**
  1. Preheat your oven to 400℉
  2. For the Salmon Bites: Cut your slices of bacon in half creating ten shorter pieces. Cut each portion of the Sweet Bourbon Salmon into five smaller, bite sized pieces. Wrap each piece with a slice of bacon, creating a "seam" at the bottom of the piece. Secure the bacon to the Salmon with a toothpick or skewer.
  3. Place the Salmon bites onto a sheet pan and bake in the preheated oven for 15-17 minutes. Half way through the cooking remove the sheet pan from the oven and brush each Salmon Bite with some of the reserved brown sugar syrup. Return to the oven and cook through to an internal temperature of 155°F before enjoying.
  4. For the Peach Julep Mocktail: In a small sauté pan bring the water and 1/2 cup light brown sugar to a simmer, just until the sugar is dissolved. Remove from the heat, transfer to a small container and chill. Reserve 1/4 cup of brown sugar syrup for the Salmon Bites and the rest for the mocktail.
  5. In a small bowl toss the sliced peaches with the salt and remaining brown sugar. Melt the butter in the sauté pan over medium-high heat. Add the peaches and cook for 2-3 minutes until softened and lightly caramelized. Remove from the heat and chill.
  6. Fill two cocktail glasses halfway with ice, preferably crushed ice. Add half of the brown sugar syrup and caramelized peaches to each glass. Top off each glass with two ounces of whiskey alternative. Garnish the mocktails with mint sprigs.
  7. To Finish: Serve the warm Bacon Wrapped Salmon Bites on a platter along with Peach Julep Mocktails on the side.
