Honey Chipotle Salmon With Tex Mex Chopped Salad

  • 1 package Sea Cuisine Honey Chipotle Salmon
  • 3 cup Romaine
  • 1/2 cup Tomato, chopped
  • 1/2 cup Cucumber, diced
  • 1/2 cup Frozen Corn
  • 1/2 cup Black Beans, rinsed and strained
  • 1/4 cup Cheddar Cheese, shredded
  • 1/4 cup Pickled Jalapeno
  • 1/2 cup Tortilla Chips, crushed
  • 1/4 cup Scallions, chopped
  • 2 tbsp Cilantro, chopped (no stem)
  • 1/3 cup Ranch Dressing, pre bought
  • 1 tbsp Taco Seasoning
  1. Prepare the Salmon according to the package instructions. In a small bowl mix together the ranch dressing and taco seasoning. Reserve under refrigeration.
  2. While the Salmon cooks assemble the Tex Mex Salad beginning with a bed of crisp chopped romaine lettuce. Artfully arrange the tomato, cucumber, corn, black beans, jalapeno and cheddar cheese across the bed of romaine.
  3. If desired, break the fully cooked Salmon portions into bite sized pieces before placing atop the salad. Garnish with scallions, cilantro and crushed tortilla chips and serve the Tex Mex ranch on the side.
