Boil water\broth in a small saucepan, remove from heat and add couscous. Stir briefly, Cover; let stand 5 minutes. Uncover and cool 10 minutes at room temperature. Preheat your oven to 350 degrees. Combine curry, cumin, coriander, salt, pepper, brown sugar and olive oil in a bowl. Add cauliflower, red pepper and onion and toss well to coat. Place the spice coated vegetables on a bake sheet prepared with aluminum foil and bake for 18-20 minutes until tender and cooked through. Allow the veggies to cool slightly before combining in a large bowl with the reserved couscous, raisins, fresh herbs and lime juice. Prepare the Cracked Peppercorn Tilapia per the instruction on the box and serve atop the curried couscous and roasted cauliflower. Don’t forget to enjoy!
